Zucchini with Green Chiles

This tasty and colorful dish makes a quick and appealing accompaniment to a wide variety of main dishes.


  2 Tbs vegetable oil

  3 cups sliced green zucchini (3 large)

  2 cans sliced yellow crookneck squash or yellow zucchini (2 medium)

  1 cup sliced onion (1 small)

  2 cloves garlic

  1 cup chopped tomato (1 medium)

  7 oz ORTEGA® Diced Green Chiles ( 1 can)

  1/2 tsp salt

HEAT vegetable oil in large skillet over medium-high heat. Add zucchini, squash, onion and garlic; cook, stirring occasionally, for 3 to 5 minutes or until vegetables are tender. Add tomato, chiles and salt; cook for 1 minute or until heated through.
