Caprese Quinoa Salad

Prep Time: 15 minutes

Servings: 2 generously


  1 box Near East Rosemary and Olive oil quinoa

  1/2 cup cherry tomatoes, cut in half

  1 cup fresh spinach, roughly chopped

  2 Tbs fresh basil, chopped or 1 teaspoon dried

  1/2 cup fresh mozzarella, cubed

  Olive oil, black pepper

1. Prepare quinoa according to instructions on box.

2. Let cool to slightly above room temp.

3. Mix in tomatoes, spinach, basil and mozzarella.

4. Drizzle olive oil and springle with black pepper before serviing.
