Wild Rice Salad

Prep Time: 5 minutes

Cook Time: 20 minutes

Servings: 8


  3 cups chicken broth

  1 1/2 cups wild rice mix

  1/3 cup oil

  2 tsp vinegar

  2 tsp green onions, chopped

  2 tsp prepared brown mustard

  1/4 tsp ground black pepper

Using chicken broth as liquid, prepare wild rice mix according to package directions

Set aside to cool slightly

For dressing, whisk together oil, vinegar, green onions, mustard and pepper

Toss dressing with cooled rice

Makes 8 Servings
