Berry Wonuts with Lemon Glaze

The wonut, a waffle deep-fried like a donut, is the latest food hybrid sensation. This fruity version has fresh berries in the waffle and is dipped in a lemony glaze. Recipe and photo credit: Rachel Currier from Baked by Rachel.


  2 cups pancake and waffle mix

  1/2 cup blueberries

  1/2 cup strawberries

   Vegetable oil

  2 cups confectioners’ sugar

  1/4 cup water

  1 tsp McCormick® Pure Lemon Extract

Prepare pancake and waffle mix as directed on package for waffles, adding berries to the batter. Cook waffles on preheated waffle iron sprayed with no stick cooking spray. (Do not overfill.) Remove waffles to cutting board.

For square waffles, carefully cut out the center of each waffle with a small knife or cookie cutter. For round waffles, cut into 4 wedges.

Pour oil in deep fryer or deep skillet, filling no more than 1/3 fill. Heat to 350°F on medium heat. Fry 1 waffle at a time 1 minute per side or until golden brown. Drain on paper towels.

For the Lemon Glaze, mix confectioners’ sugar, water and lemon extract in medium bowl until smooth. Add additional water as needed for thin icing consistency. Dip waffles in Glaze. Let stand on wire rack set over large baking sheet to drain. Serve immediately.
