The Galbani Grilled Caprese

Prep Time: 2 hours

Cook Time: 5 minutes

Servings: 4

Ingredients

  2 Galbani® Mozzarella Fresca™ 8oz. Ball, Sliced into 1/4” Rounds

  5 cups Fresh Basil Leaves, divided

  2 cups Extra Virgin Olive Oil

  4-5 Beefsteak Tomatoes, sliced into 1/4” rounds

  Salt and Pepper, to taste

Directions

Basil-Infused Olive Oil:

1. Combine 4 cups fresh basil and 2 cups olive oil in a food processor and mix until smooth.

2. In a saucepan, simmer olive oil and basil puree over medium heat for 1 minute.

3. Strain mixture through cheesecloth into a bowl.

4. Let the mixture sit 1-2 hours.

5. Pour infused oil into a jar and seal if not used right away.

Grilled Tomatoes:

1. Heat grill to medium. Oil the grill grate.

2. Brush tops of tomatoes with olive oil and salt to taste.

3. Grill 3-4 minutes on each side (until you see grill marks).

Assembly:

1. Layer Galbani® Fresh Mozzarella, tomato, and fresh basil on serving plate.

2. Drizzle with basil-infused olive oil.

3. Add salt and pepper to taste.

4. Garnish and server with remaining fresh basil.
