Pasta Primavera with Creamy Sauce

Celebrate spring, fall or winter with this mouthwatering pasta favorite. Then get ready for the compliments, thanks to the zesty addition of Clamato!

Ingredients

  1 lb Linguini Pasta

  1 1/2 cups Clamato®

  12 oz Evaporated Milk

  1 Tbs Cornstarch

  1/4 cup Roman Cheese

  4 oz Cream Cheese

  3 Tbs Olive Oil

  1/2 Medium Red Onion

  2 cloves Garlic, Minced

  1 Medium Sized Carrot

  9 oz French Cut Green Beans

  9 oz Broccoli

  Chopped Basil

Directions

1. Cook 1 lb of Linguini pasta according to package instructions. Meanwhile, in a saucepot over medium heat, combine 1 1/2 cups Clamato®, 12 oz of evaporated milk and 1 tbsp. cornstarch; cook about 8-10 minutes, and stir frequently.

2. Reduce heat, add 1/4 cup roman cheese and 4 oz cream cheese; stir until both cheeses have melted and sauce is smooth, keep warm.

3. In a large sauté pan, over medium-high heat; heat 3 tbsp olive oil, add 1/2 of a medium red onion, 2 cloves of minced garlic and 1 medium carrot sliced thin; cook until tender 5-8 minutes. Add 9 oz of French cut green beans and 9 oz of broccoli; cook 5 more minutes.

4. Drain pasta, stir into creamy tomato sauce; add vegetables. Sprinkle chopped basil.
