Beef Enchiladas

Ingredients

  1 lb. ground beef or 1 lb. boneless skinless chicken breasts , chopped

  1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa , divided

  1 pkg. (8 oz.) VELVEETA Mild Cheddar Shredded Pasteurized Process Cheese Food , divided

  10 flour tortillas

Brown meat in large skillet; drain. Add 1/2 cup of the salsa and 1 cup of the VELVEETA; cook and stir on medium-low heat until VELVEETA is completely melted.

Spoon 1/4 cup meat mixture down center of each tortilla; roll up. Arrange, seam-side down, in 12x8-inch microwavable dish. Top with remaining salsa and VELVEETA. Cover loosely with plastic wrap.

Microwave on HIGH 4 minutes until VELVEETA is melted.

Take a Shortcut: Substitute 1 pkg. (6 oz.) LOUIS RICH Grilled Beef or Chicken Breast Strips for the browned ground beef. Mix strips, 1/2 cup of the salsa and 1 cup of the process cheese food in medium saucepan; cook and stir on medium-low heat until process cheese food is completely melted. Continue as directed.
